Saffron or Zarparan(saffron is the Arabic equivalent of the word saffron), is a plant from the genus Lily, saffron genus has medicinal properties and food color. Iran is the largest producer of saffron in the world.

Attributes:

  • Saffron plant is small and has a lifespan of several years and a height of 10 to 30 cm. (Relevant image)
  • From the stem of the onion, a number of narrow and long leaves come out and also from the middle of the leaves, the flowering stem comes out, which leads to one to three flowers. The flowers have 6 purple petals (in some color spectrums it is floral or purple)
  • The flowers have 3 flags and 1 female leading to the stigma are red and orange.
  • The part used is the plant, the end of the cream and the stigma of 3 branches, which is known as saffron. This part of the plant is fragrant and somewhat bitter.

In general, saffron is a valuable food that is obtained from a very small amount of saffron flowers. In fact, from every 100,000 to 200,000 plants, about 5 kg of saffron flowers are obtained, which after drying, reaches 1 kg.
